Although where ever permitting, you can play this virtually ANYWHERE. Think about playing Mud Volleyball, which requires a mud pit or an open field with an over-saturated area of standing water. Dirty, but splashing in the mud can trigger fond memories of your childhood! Another suggestion would be to play in a pool of water, hence the term Water Volleyball.
